there is a type of kimchi in korea called dongchimi, directly translated to water radish kimchi. it’s made by lacto-fermenting korean radish with a few other ingredients in a brine. this dish is typically enjoyed by drinking the brine with all it’s lacto-fermented goodness.
the brine is the point of this dish, not necessarily the fermented vegetables/ radish. we’ve captured all the goodness of the brine and created a sparkling savory beverage.
